Maraschino Cherry Power Bites

Ingredients

  • 1 c rolled oat
  • 8-10 dried dates pitted
  • 2-3 tbs hot water
  • 1/2 c chopped almonds
  • 1/2 c chopped maraschino cherries
  • pinch of salt

Topping (your choice or both)

  • 1/4 c unsweetened coconut
  • Semi sweet chocolate chips

Directions - Cupcakes

  1. Soak dates in hot water for 5 minutes and drain

  2. Place oat and almonds and salt in a food processor and pulse several times then pull off into bowl.

  3. Drain pitted dates and place in food processor with the cherries, pulse until smooth, add the oats and almonds into the mix and again pulse until well mixed.

  4. Roll into small balls about 1 ½ tbs each.

  5. Finish by rolling in coconut or dip into chocolate refrigerate in a covered container for up to 3 days.
