Ingredients
14 servings (3 muffins per serving)
- 1 (10 oz) jar of CherryMan Farm to Market Maraschinos™, drained
- 1 c whole wheat flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- 2 large eggs
- ½ plain 0% Greek yogurt
- ½ c brown sugar
- 1/3 c extra-virgin olive oil
- Zest and juice of 1 small orange (about 5 tbs. juice)
- 1 tbs. chia seeds
Directions

Preheat oven to 375°F. Lightly grease or line a mini muffin tin.

Slice 12 cherries into quarters (these will be placed on top of each muffin), and chop remaining cherries. Set aside.

In a large bowl, whisk to combine flour, baking powder, and baking soda.

In a small bowl, whisk eggs, yogurt, sugar, oil, and orange juice/zest until thoroughly combined. Pour into dry mixture and stir just until blended. Gently fold in the chopped cherries and the chia seeds.

Fill each muffin with 1 tablespoon of batter and top with one of the cherry quarters. Bake until a toothpick inserted in the center comes out clean, about 12 minutes. Refrigerate or freeze leftover muffins in an airtight container.
